Valentine’s Day is here and that means chocolate is on the menu! And everyone says…”YES!”
While most milk and white chocolates are loaded with sugar and fats, good news is quality dark chocolate is actually good for you in measured doses. And the darker the chocolate, the better it is for you!
Cocoa beans, the main ingredient in chocolate, are full of anti-oxidants! These anti-oxidants called flavonoids rank right up there with some some super foods like acai berry, blueberry, cranberry, and pomegranate.
Flavonoids are remarkable. They are known to increase brain power, increase blood flow, prevent clotting and promote healthy heart functions. They enable our body to produce nitric oxide that may help in lowering blood pressure. Wow, please pass the chocolates! Just make sure they’re dark!
So in honor of Valentine’s Day and dark chocolate, here’s a healthy recipe you can add to your recipe list!
Dark Chocolate Strawberry Cups
- 1 cup dark chocolate
- 6-10 paper cupcake liners
- 1-2 cups fresh strawberries or your favorite fruit
- Non stick cooking spray
Melt chocolate in a heat proof container, either in the microwave or melting it in a small pan slowly over another larger saucepan filled halfway with water, on low heat. It will melt quickly, so stir, stay there while it’s melting and be careful not to let it burn!
Lightly spray cupcake liners with organic spray before spooning melted chocolate inside. Carefully brush the chocolate mixture inside the liner with a spoon. The layer of chocolate should be thin, but thick enough to hold up, about 1/4″ or less. Take special care on the sides. Place on a plate in the refrigerator or freezer for 30 minutes and allow the chocolate to harden. If you see any thin spot, re-brush chocolate on the liners.
When ready, peel the paper liners to reveal a perfect chocolate cup. Fill with sliced strawberries, your favorite fruit, one scoop of yogurt or ice cream for a special treat
